Homemade Pasta!

Homemade Pasta! with Michelle Noyola

When I was a little girl growing up just outside of Philadelphia, my Italian family gathered every Sunday for dinner.

I remember my great-grandmother, with her strong Italian hands, kneading pasta dough every week. If we were lucky, we kids would get to help her turn the crank on the pasta machine to flatten and cut the noodles. We always wanted to make the noodles as long as we possibly could….so long that a single noodle would be way too much pasta to twirl around a fork.

I still love to make homemade pasta with the hand-crank machine. Not only does it take me back to my childhood, but there is absolutely nothing that compares to the taste of homemade noodles. They are light and eggy and so delicious!

Homemade pasta is not difficult to make…but it’s messy – you can expect to have flour all over yourself and possibly your entire kitchen. But it is loads of fun! Kids always have a ball in my hands-on pasta making class learning how to make pasta and sauce…and of course, sitting down to eat it is the best part!
